Bắp cải, hay còn gọi là cải bắp, là một loại rau quen thuộc trong bữa ăn hàng ngày của người Việt Nam và nhiều nền văn hóa trên thế giới. Bắp cải có thể có nhiều màu từ xanh lá cây đến đỏ và tím và lá có thể nhẵn hoặc nhăn nheo. Bắp cải có thể được ăn sống, hấp, luộc, xào hoặc nhồi, có thể sử dụng bắp cải để thêm vào các món salad hoặc xà lách trộn.
Khi lựa chọn bắp cải đảm bảo các lá căng và chắc vì lá lỏng lẻo cho thấy bắp cải già hơn. Bảo quản bắp cải trong tủ lạnh đến 2 tuần.
Thành phần dinh dưỡng của 1 nửa chén bắp cải nấu chín cắt nhỏ (75 gram) chứa: 17 calo, 4 gam carbohydrate (trong đó có chứa 2 gam đường và 1 gam chất xơ), 1 gam protein.
Ăn nửa chén bắp cải nấu chín sẽ cung cấp 30-35% nhu cầu vitamin C hàng ngày và, 81,5 microgam vitamin K, 11 miligam magiê, 22 microgam folate, Vitamin B-6, canxi, kali và thiamin nhưng ít hơn.
Bắp cải có nhiều chất xơ và chứa chất chống oxy hóa mạnh, bao gồm polyphenol và các hợp chất lưu huỳnh.
